Catering portion guide
Plan on 1/3 lb (about 5.3 oz) of carved ham per person as a main. Bone-in ham yields about two thirds, so buy roughly 1/2 lb per person: 50 guests needs about 17 lb carved from about 25 lb of bone-in ham.
Bone-in ham loses roughly a third of its weight to bone and trim. Boneless ham is close to 1.1, so buy less if you are ordering boneless.
Planning factor: 1.5x. For every 1 lb you want to serve, order about 1.5 lb of bone-in ham.
Order is what to buy as bone-in ham. Serves is what reaches the plate after trim and cooking.
